Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the lobster

  1. Half-boil the lobsters.

  2. Remove the meat from the lobsters.

  3. Cut the lobster meat into small bits.

  4. Season the meat with mace, white pepper, nutmeg, and salt.

  5. Press the mixture into a pot.

  6. Cover the pot with butter.

Bake and finish

  1. Bake in a 350°F (175°C) oven for 30 minutes.

  2. Add the spawn.

  3. Once cooled, remove the lobster from the pot.

  4. Place the lobster back with some of the butter.

  5. In a mortar, beat the remaining butter with some of the spawn.

  6. Mix the colored butter with enough to cover the pots.

  7. Strain the mixture.

  8. Add cayenne pepper if desired.
