Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that dissolves in hot liquid and sets the cream as it cools.
Cream
Provides fat for a rich, smooth texture and a creamy mouthfeel.
Milk
Adds liquid and body, softening the richness of the cream.
Raspberry juice or syrup
Gives the cream its raspberry flavour and pink colour.
Sugar
Sweetens the cream and balances the fruit flavour.

The step that matters

Whisk until three parts cold, then pour into a mold. Whisking while the mixture cools traps air and thickens it evenly. Pouring too early, while still warm, can stop the isinglass from setting properly.
