Haunch Op Lamb

Ingredients

Directions

Roast

  1. Roast the haunch of lamb for 17 minutes per pound.

  2. Baste with baked flour until nicely browned.

Finish and serve

  1. Place the haunch on a hot dish, fat side up.

  2. Pour off excess fat.

  3. Add boiling water and salt to the drippings, then pour into the dish (not over the lamb).

  4. Serve immediately with mint sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haunch of lamb
Forms the main meat, whose fat renders and browns as it roasts.
Baked flour
Browns the outside of the lamb and colours the pan drippings.
Boiling water
Dissolves the browned drippings into a thin, flavourful gravy.
Mint sauce
Adds sweetness and acidity that balance the rich, fatty lamb.

The step that matters

Pour the drippings into the dish, not over the lamb. The browned crust is fragile and softens when liquid runs over it. Keeping the gravy in the dish preserves the crisp, browned surface that the basting built up.

Swap the mint

How well each one fits the dish's main ingredients (lamb, flour, sauce, sugar, vinegar):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Capersfits better
  4. Mintthe original
