Ingredients

Directions

  1. Pare the partridges and shape them like cutlets.

  2. Slice the partridges transversally into thin pieces.

  3. Mask the slices with a layer of fat-liver preparation, about ⅛ inch thick.

  4. Once cooled, cover the cutlets with brown 'chaufroix' sauce.

  5. Place the cutlets on a baking sheet and glaze with jelly.

  6. Trim excess sauce once the jelly has set.

  7. Arrange the cutlets in a circular pattern on a dish.

  8. Fill the center with small glazed truffles.

  9. Surround the cutlets with small jelly 'croûtons'.
