Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down when simmered and rubbed through a sieve, giving the soup its body and thickness.
Sago
Thickens the liquid as it simmers, becoming clear when fully cooked.
Milk
Adds creaminess and mild sweetness to the soup's flavor.
Butter
Fat that softens the vegetables and carries flavor into the soup.

The step that matters

Simmering the sago until clear. Sago is a starch that thickens only when it is fully hydrated and cooked through. Stopping early leaves the soup cloudy and thin, while simmering too hard after adding the milk can scorch it on the base of the pan.

Swap the celery

How well each one fits the dish's main ingredients (potato, onion, butter, milk):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleyfits about as well
  4. Celerythe original

Fit is the average pairing score against potato, onion, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
