Puff Pastry

Ingredients

Directions

Prepare the dough

  1. Sift the flour to remove lumps.

  2. Wrap the butter in a clean cloth and squeeze out moisture.

  3. In a bowl, make a well in the flour, add salt, lemon juice, and egg yolk.

  4. Gradually add cold water and mix with fingers to form a soft, elastic dough.

  5. Knead until smooth, then roll out to ¼ inch thick.

Laminate

  1. Press the butter to half the size of the rolled pastry and place it on the dough, ¼ inch from the edge.

  2. Fold the pastry over the butter and lightly press the edges together.

  3. Roll out again, ensuring the butter doesn't surface, then fold into thirds.

  4. Let it rest in a cool place for 15 minutes.

  5. Repeat the rolling and folding process, resting for 15 minutes each time, until done seven times.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine flour
Forms the gluten network that gives the dough its structure and elasticity.
Butter
Forms separate layers that puff into flaky sheets when the pastry bakes.
Egg yolk
Adds richness and helps bind the dough together.
Lemon juice
Adds a little acidity that helps keep the dough tender.

The step that matters

Keeping the butter inside the dough during rolling. If the butter breaks through or softens into the dough, the layers merge and the pastry loses its flakiness. Resting the dough in a cool place keeps the butter firm between folds.

Swap the lemon

How well each one fits the dish's main ingredients (flour, butter, egg):

  1. Raisinfits better
