Ingredients

Directions

Prepare the mold

  1. Soak a plain round tin mold in cold water.

  2. Line the mold with trimmed savoy biscuits, placing them closely together to reach the depth of the mold.

  3. Decorate the bottom of the mold with set glace cherries or jelly.

Make the cream filling

  1. In a bowl, combine 2 tablespoons of caster sugar with lemon juice and brandy.

  2. Pour in the cream and add more sugar if needed, then whisk until combined.

  3. Dissolve the gelatine in the milk and stir it into the cream mixture.

Set and serve

  1. Nearly fill the mold with the mixture, cover it with sponge cake, and refrigerate until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a light, airy body once whipped and set.
Gelatine
Sets the cream mixture so it holds its shape when turned out or cut.
Savoy biscuits (in the method)
Form the structure and edge of the mold around the filling.
Caster sugar
Sweetens the cream mixture and balances the lemon and brandy.

The step that matters

Dissolving the gelatine in the milk. Gelatine must be fully dissolved before it is stirred into the cream, otherwise small undissolved granules will not hydrate evenly and can form lumps or weak spots in the set dessert.

Swap the lemon

How well each one fits the dish's main ingredients (cream, milk, brandy, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Apricotfits better
