Raspberry Buns

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Preheat the oven to 400°F (200°C).

  2. Rub the lard into the flour, then mix in the sugar.

  3. Add the beaten egg and enough milk to form a firm paste.

  4. Roll out the dough to about ¼ inch thick and cut into rounds.

Fill and shape

  1. Place a teaspoon of raspberry preserve on each round.

  2. Wet the edges, fold them over, and pinch to seal.

  3. Place the buns seam‑side down on a greased baking tin.

Top and bake

  1. Cut a shallow cross on top of each bun and sprinkle with crystallized sugar.

  2. Bake for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough that holds the filling.
Lard
Rubbed into the flour to add tenderness and a crumbly texture.
Egg
Binds the dough and adds richness and structure.
Sugar
Adds sweetness and helps the crust brown in the oven.
Raspberry preserve
Provides sweetness and fruity flavour inside the bun.

The step that matters

Pinch the edges to seal the filling. If the edges are not wet and pinched tightly, the preserve can leak out during baking and the buns may open up and lose their filling.

Swap the raspberry

How well each one fits the dish's main ingredients (flour, sugar, egg, milk):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Raspberrythe original

Fit is the average pairing score against flour, sugar, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
