Chicken Souffle

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Chop the cooked fowl very fine.

  2. Pound the fowl in a mortar with reduced white sauce, double cream, butter, salt, and pepper.

  3. Mix in the egg yolks and rub the mixture through a sieve.

Fold and bake

  1. Beat the egg whites until stiff and gently mix them into the fowl mixture.

  2. Bake in a souffle dish at 350°F (175°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air and lift the souffle as it bakes.
Egg yolks
Enrich the base and help it set into a custard-like texture.
Reduced white sauce
Adds body and moisture so the base holds together before baking.
Double cream
Adds richness and moisture, giving a softer, more tender crumb.
Butter
Adds fat for flavour and a smoother, richer texture.

The step that matters

Fold in the egg whites gently. Stiffly beaten whites hold the air that makes the souffle rise. Overmixing knocks that air out, so the souffle bakes flat and dense.
