Oysters a LA Mode

Ingredients

Directions

  1. Remove the gills from the oysters and place them in a saucepan with the sauce.

  2. Cover the saucepan and let it sit on low heat for five minutes without boiling.

  3. Brush small paper cases with salad oil and fill them with the oyster mixture.

  4. Blanch the oysters, press them slightly between two dishes until cold, and slit them open without severing.

  5. Add a ¼ inch layer of reduced d’Uxelles sauce inside the oysters and fold them back together.

  6. Dip the oysters in frying butter and fry them in hot fat until crisp.
