Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and give the frozen pudding its rich structure.
Milk
Forms the liquid base of the custard, carrying the eggs and sugar.
Whipped cream
Adds fat and air, making the frozen texture light and smooth.
Caster sugar
Sweetens the custard and softens the texture of the frozen mixture.
Brandy
Adds aroma and flavor; alcohol also keeps the frozen texture softer.
Candied fruit
Contributes sweetness, chewy texture and concentrated fruit flavor.

The step that matters

Strain the mixture. Straining after the custard is cooked removes any bits of cooked egg, giving a smooth texture in the finished frozen pudding.
