What each ingredient does

Apricots
Provide the fruit flavor and soft texture that the syrup surrounds.
Lump sugar
Sweetens the fruit and, as the syrup reduces, thickens the coating.

The step that matters

Reducing the syrup to thread stage. Sugar concentration rises as water evaporates. Stopping too early leaves a thin syrup that runs off the fruit, while reducing too far makes it tight and sticky as it cools.
