Why it works: Sauce and ketchup match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,099 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Hare Soup
Ingredients
Directions
Make the soup
In a jug, combine the hare, ham, celery, onions, sweet herbs, red wine, and water.
Cover and stew for 2 to 3 hours until the meat is tender.
Finish and season
Strain the soup and remove the meat from the bones.
Pound the meat in a mortar and add it back to the soup until it reaches the desired thickness.
Bring the soup to a boil and stir in the soy sauce, ketchup, cayenne pepper, salt, and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Hare
- Provides the main meat and rich flavour that defines the soup.
- Ham
- Adds savoury, salty depth to the stock as it stews.
- Onions
- Contribute sweetness and aromatic depth to the broth as they cook.
- Red wine
- Adds acidity and aromatic complexity to the stewed broth.
The step that matters
Stewing until the meat is tender. Hare is a lean, tough meat, so it needs long, gentle, covered stewing to break down connective tissue. Stopping early leaves the meat chewy and the broth thin in flavour.
Swap the onion
How well each one fits the dish's main ingredients (ham, celery, red wine, sauce, ketchup, pepper, sugar):

Fit is the average pairing score against ham, celery, red wine, sauce, ketchup, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
