Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Sheep’s Head Roasted with Chopped Liver

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Clean the sheep's head and season it with coarse sea salt and black pepper.

Roast and cook the potatoes

  1. Place the sheep's head in a roasting pan and roast for about 1.5 to 2 hours, until tender.

  2. While the head is roasting, peel and cut the potatoes into wedges.

  3. Boil the potatoes in salted water until tender, then drain.

Serve

  1. Serve the roasted sheep's head with the chopped liver and roasted potatoes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sheep's head
Provides the main meat, whose long roasting softens its tougher connective tissue.
Chopped liver
Adds rich, savoury flavour and a soft texture to the plate.
Potatoes
Supply starchy bulk and a mild, tender side to balance the rich meat.

The step that matters

Roasting until tender. The head's connective tissue needs sustained, moderate heat to break down and turn tender. Taking it out early leaves the meat tough and chewy, so check for tenderness rather than relying only on the clock.

Swap the potato

How well each one fits the dish's main ingredients (liver, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Mustardfits better
  4. Potatothe original

Fit is the average pairing score against liver, pepper. Candidates are from the same food group and used in at least 100 recipes.
