Why it works: Orange and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Orange Jelly

Ingredients

Directions

Make the jelly

  1. In a saucepan, combine water, isinglass, sugar, and the rind of 1 orange and 1 lemon.

  2. Heat the mixture until the isinglass dissolves, skimming off any scum.

  3. Add the juice of the Seville orange, lemon, and enough juice from the China oranges to make a total of 1 pint.

  4. Stir over heat until just boiling, then skim well.

  5. Strain the jelly through a fine sieve or jelly bag.

Set and serve

  1. When nearly cold, pour into a wetted mold.

  2. Once completely cool, turn out onto a dish and garnish as desired.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: 3-hexenal (apple, fruity).

    Shared aroma: beta-damascenone (apple, rose).

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Fish gelatin that sets the liquid into a firm, wobbly jelly as it cools.
Seville orange juice
Provides the sharp, bitter citrus flavour that defines the jelly.
Lemon juice
Adds acidity that brightens the sweetness and sharpens the citrus flavour.
Loaf sugar
Sweetens the jelly and balances the sharpness of the citrus juices.
China orange juice
Supplies bulk juice and mild sweet orange flavour to reach the one-pint total.

The step that matters

Skim well and strain before setting. Scum and fine solids left in the liquid cloud the jelly and can spoil its clarity. Removing them while hot, then straining, gives a clear, glossy set.
