Fig’s Pry, to Dress Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Layer the pie

  1. Place the lean fry at the bottom of a pie dish.

  2. Sprinkle with chopped sage and onion, and season with pepper and salt.

  3. Slice the potatoes and add a layer on top of the seasonings.

  4. Add the fat fry, more seasoning, and another layer of potatoes on top.

Bake

  1. Fill the dish with boiling water and bake for 2 hours at 400°F (200°C).
