Ingredients

Directions

Prepare

  1. Wipe the rhubarb dry and remove the string or peel.

  2. Weigh the rhubarb and place it in a preserving pan with the sugar.

  3. Mince the lemon rind finely and add it to the pan.

Cook the jam

  1. Place the pan by the side of the fire and stir to prevent burning.

  2. Once the sugar is dissolved, move the pan over the fire and let it boil.

  3. Keep skimming and stirring with a wooden or silver spoon.

Pot and seal

  1. Pour the jam into pots and cover with oiled and egged papers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the bulk and tart flavour that the jam is built around.
Loaf sugar
Sweetens the jam and, as it dissolves and boils, helps it thicken and keep.
Lemon rind
Adds aromatic citrus oil that brightens the flavour of the rhubarb.

The step that matters

Stirring while the sugar dissolves. Sugar settles on the base of the pan and scorches easily before the mixture comes to a boil. Stirring keeps the sugar evenly dissolved and the fruit from burning, which would spoil the flavour of the jam.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
