The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavor and colour of the jelly.
Pounded sugar
Sweetens the juice and balances the fruit's tartness.
Isinglass (gelatin)
Sets the liquid into a firm, sliceable jelly as it cools.

The step that matters

Set the mold in ice. Isinglass is a gelatin that sets only when cold, so the mold must chill enough for the mixture to firm into a jelly rather than stay liquid.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, gelatin):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, gelatin. Candidates are from the same food group and used in at least 100 recipes.
