Why it works: Flour and parsley are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 16,675 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Ask the fishmonger to clean and skin the whiting, fastening the tail in the mouth of the fish.

  2. Rinse the whiting and pat dry.

  3. Season with salt and dust lightly with flour.

Fry and serve

  1. Heat oil in a frying pan over medium heat.

  2. Fry the whiting until golden brown on both sides, about 3-4 minutes per side.

  3. Serve garnished with parsley.

What each ingredient does

Whiting
Forms the main body of the dish; its firm flesh holds together during frying.
Flour
Dusted lightly on the fish, it helps create a golden, crisp browned surface when fried.
Oil
Conducts heat to the fish, browning the surface and cooking it quickly.

The step that matters

Fry the whiting until golden brown on both sides. Frying over medium heat browns the flour-dusted surface through the Maillard reaction, which gives flavour and colour. Pat the fish dry first so surface moisture does not steam the coating and prevent browning.

Swap the parsley

How well each one fits the dish's main ingredients (whiting, flour):

  1. Capersfits better
  2. Jalapenofits better
  3. Parsleythe original
  4. Turmericfits about as well

Fit is the average pairing score against whiting, flour. Candidates are from the same food group and used in at least 100 recipes.
