What each ingredient does

Giblets
Provide the main meat, which becomes tender through long, gentle stewing.
Flour (in the method)
Coats the giblets so the stewing liquid thickens slightly around them.
Carrot
Adds natural sweetness and body to the stewing liquid.
Onion
Adds savoury depth and aroma to the stewing liquid.

The step that matters

Stew gently for 45 minutes. Keeping the liquid at a gentle simmer rather than a hard boil lets connective tissue break down slowly, so the giblets become tender without toughening or falling apart.
