Ground Rice Pudding

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice base

  1. Heat the milk gently with lemon rind, cinnamon, and laurel leaves until flavored.

  2. Remove the flavoring ingredients and bring the milk to a boil.

  3. Mix the ground rice with a little cold milk, then add to the boiling milk and stir until thick.

  4. Transfer the rice mixture to a bowl and let it cool.

Finish and bake

  1. Mix in sugar, butter, and beaten eggs.

  2. Pour into a buttered dish and bake in a gentle oven at 300°F (150°C).

  3. Add brandy for extra flavor and an additional egg for richness if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the rice swells in and the eggs set into a custard.
Ground rice
Thickens the milk as its starch absorbs liquid and swells when heated.
Eggs
Bind and set the pudding while adding richness and a firmer texture.
Butter
Adds fat for a richer flavor and a smoother, softer mouthfeel.
Sugar
Sweetens the pudding and balances the flavors of the milk and eggs.

The step that matters

Let the rice mixture cool before adding the eggs. If the cooked rice mixture is still very hot when beaten eggs go in, the eggs can scramble instead of blending smoothly, so cooling first keeps the custard smooth as it sets in the oven.
