Asparagus Forced in French Rolls

Ingredients

Directions

Prepare the rolls

  1. Cut off the top crust of the French rolls and remove the crumb carefully.

  2. Fry the rolls in fresh butter until brown.

Make the filling

  1. In a saucepan, combine cream, egg yolks, salt, and nutmeg; stir over low heat until thickened.

  2. Boil the asparagus; save the tops for garnish and chop the rest into small pieces.

  3. Mix the chopped asparagus into the cream mixture and fill the rolls with it.

  4. Make holes in the top crust to insert the asparagus tops, then replace the crust.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream mixture as they set over low heat, giving the filling body.
Cream
Forms the rich base of the filling and keeps it moist.
Fresh butter
Fat that browns the outside of the rolls and adds richness.
Asparagus
Main vegetable filling, adding flavour and texture to the custard.

The step that matters

Stir the cream mixture over low heat until thickened. Egg yolks set into a custard at moderate temperatures; too much heat can curdle them into lumps, leaving the filling grainy instead of smooth.
