Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel, core, and slice the apples.

  2. Stew the apples in a pan with water and sugar.

Assemble

  1. Mix the bread crumbs and suet together.

  2. Butter a pie dish and line it with the crumb mixture.

  3. Add layers of apples and crumb mixture alternately, finishing with crumbs on top.

Bake

  1. Bake in a 400°F (200°C) oven for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the bulk of the pudding and absorb moisture from the stewed apples.
Suet
Adds fat that enriches the crumbs and keeps the pudding moist as it bakes.
Apples
Provide the main fruit flavour and moisture, softening as they stew and bake.
Sugar
Sweetens the apples and balances their tartness.

The step that matters

Stew the apples until tender. Apples baked raw release water unevenly and can stay firm, so cooking them first softens the fruit and controls the moisture that soaks into the crumbs.

Swap the apple

How well each one fits the dish's main ingredients (bread, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Datesfits about as well
  4. Applethe original

Fit is the average pairing score against bread, sugar. Candidates are from the same food group and used in at least 100 recipes.
