Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the cream as they cook gently and add richness and body.
Gelatine
Sets the cream so it holds its shape when chilled and unmolded.
Lemons
Provide the sharp acidity and lemon aroma, with rind flavour from the zest.
Castor sugar
Sweetens the cream and balances the sharpness of the lemon juice.

The step that matters

Stir over low heat without boiling. Egg proteins thicken gently at low heat, but boiling can curdle the eggs and leave a grainy texture, so the mixture must only thicken gradually.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
