New Potatoes

Ingredients

Directions

  1. Clean the potatoes by rubbing them with a cloth sprinkled with salt to remove the skin.

  2. Wash the potatoes and place them in a stewpan that will just hold them.

  3. Fill the stewpan with water and add a little salt.

  4. Boil the potatoes until nearly done, then strain the water.

  5. Cover the potatoes and set them by the fire to finish cooking with steam.

  6. When ready, serve the potatoes on a dish and pour béchamel sauce over them, or serve them in a napkin.
