Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart filling's main body and its sharp, tangy flavour.
Sugar
Sweetens the rhubarb and helps the topping brown and crisp in the oven.
Egg white
Forms a thin coating over the crust and filling that helps set and brown the top.
Short paste for tart crust
Forms the crisp, sturdy base that holds the rhubarb filling.

The step that matters

Fill without adding water. Rhubarb releases its own juice as it bakes. Adding extra liquid can make the filling runny and soggy the base, so the tart may not set properly.

Swap the rhubarb

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Rhubarbthe original

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
