What each ingredient does

Lobster
Provides the main protein, whose tender texture depends on careful cooking time.
Coarse sea salt
Seasons the cooking water so the lobster meat is lightly flavoured as it cooks.

The step that matters

Cooking time for each lobster. Lobster meat turns firm and rubbery when overcooked, so timing must match the lobster's size. Removing it from the pot at the right point keeps the flesh tender and moist.

Swap the parsley

How well each one fits the dish's main ingredients (lobster, sauce):

  1. Capersfits better
  2. Tarragonfits better
  3. Gingerfits about as well
  4. Parsleythe original

Fit is the average pairing score against lobster, sauce. Candidates are from the same food group and used in at least 100 recipes.
