What each ingredient does

Large shrimps
Provide the main protein, which firms and turns opaque as it cooks.

The step that matters

Timing the cook. Shrimp turn from translucent to opaque as their proteins set, and overcooking squeezes out moisture and makes them rubbery. Pull them once just opaque, since residual heat keeps cooking them after draining.
