What each ingredient does

Whole rice
Softens in the milk and thickens into the body of the pudding.
Milk
Cooks with the rice to form the creamy, thick base.
Sugar
Sweetens the pudding and helps give it a soft texture.
Eggs
Bind the mixture and set when cooked, giving the pudding firmness.
Pounded bitter almonds
Add a distinct almond aroma and flavour to the pudding.

The step that matters

Filling the mold completely and boiling for exactly 1 hour. Eggs set as they heat, so the pudding needs an even, sealed steam cook; a mold that is not filled fully or an uneven boil can leave the texture loose or cooked unevenly.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (rice, milk, sugar, lemon, almond, egg, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against rice, milk, sugar, lemon, almond, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
