Rose-coloured Jelly

Ingredients

Directions

  1. Dip the pig's feet into cold water.

  2. Place them in a deep pan and sprinkle rosin on both sides.

  3. Cover with boiling water and let sit for 1-2 minutes.

  4. Scrape the hair off with a knife.

  5. Wash the feet thoroughly in hot and cold water.

  6. Divide at the joint and split the claws, removing the fat between them.

  7. If the feet are large, add 1 gallon of cold water; if smaller, use 1-2 quarts less.

  8. Optionally, omit half of the raw egg yolk and use rich cream instead.

  9. To steam, place the egg yolks with gravy or white sauce in a stewpan and simmer gently for 15-20 minutes.
