Ingredients

Directions

Prepare

  1. Thinly slice the rinds of the lemons and combine them with sugar and spring water in a bowl. Let sit for 6 hours.

  2. Strain the mixture and add the juice of the lemons and the beaten eggs. Strain again to remove any solids.

Cook

  1. Remove the lemon rinds and stir the mixture continuously over gentle heat for 6 to 8 minutes until it thickens slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Their proteins set when gently heated, thickening the mixture into a cream.
Sugar
Sweetens the cream and balances the sharp acidity of the lemons.
Lemons
Provide acidity and fragrant oils from the rinds and bright flavour from the juice.

The step that matters

Heat gently and stir continuously. Egg proteins set at moderate temperatures and thicken the cream smoothly. Overheating or pausing to stir can curdle or scramble the eggs into lumps.
