Ingredients

Directions

Prepare the peaches

  1. Wipe the peaches and soak them in brine for 3 days.

  2. Drain the peaches on a sieve for several hours.

Make the pickle

  1. Boil the vinegar with the whole white pepper, bruised ginger, coarse sea salt, mace, mustard seed, and cayenne in a muslin bag for 10 minutes.

  2. Place the peaches in a jar and pour the boiling pickle over them.

  3. After 2 months, the peaches will be ready to use.

Make the mangoes

  1. To make mangoes, cut a round hole at the stalk end of each peach to remove the stone.

  2. Fill the peaches with fresh mustard seed washed in vinegar, and optionally add garlic, bruised shallots, cayenne, horseradish, or chilies.

  3. Replace the cut‑out piece and secure it with packthread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit that is pickled and, when stuffed, becomes the mango imitation.
Vinegar
Acts as the pickling liquid that preserves the fruit and gives it sharp acidity.
Mustard seed
Adds pungent, sharp flavour to the pickle and to the stuffing.
White pepper
Contributes warm, sharp pungency to the pickling liquid.
Ginger
Adds aromatic warmth that flavours the pickling liquid.

The step that matters

Draining and soaking the peaches. Soaking in brine firms and seasons the flesh, and draining well removes excess brine so the fruit does not dilute the vinegar pickle.

Swap the white pepper

How well each one fits the dish's main ingredients (peach, egg, vinegar, ginger, mace, mustard):
