Modern Cookery

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Mix the finely pounded almonds with the sugar.

  3. Grate the rind of the chosen fruit and mix it with part of the sugar, then dry and powder it.

Make and bake

  1. Whip the egg whites until stiff peaks form.

  2. Gently fold the egg whites into the almond mixture.

  3. Spoon the mixture onto a baking sheet and bake for 20 to 30 minutes until set.

Finish

  1. Allow to cool before adding preserve or cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavour of the cake.
Egg whites
Whipped to stiff peaks, they give the cake its light, airy structure.
Sugar
Sweetens the cake and helps stabilise the whipped egg whites.

The step that matters

Folding the egg whites into the almond mixture. Folding gently keeps the air trapped in the whipped whites. Stirring vigorously deflates the foam, so the cake bakes up dense instead of light.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
