Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apples

  1. Pare and core the apples, then place them in a saucepan with enough water to cover.

  2. Stew the apples until soft, then beat them smooth.

Make the filling

  1. Mix in the sugar, butter, lemon juice, and grated peel.

  2. Add the egg yolks and stir until well combined.

Bake and serve

  1. Line a dish with puff pastry.

  2. Pour the mixture into the lined dish.

  3. Bake for about 45 minutes at 350°F (175°C).

  4. Before serving, sprinkle loaf sugar on top until it looks white.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Soften into a smooth base that gives the pudding its body and fruity flavour.
Egg yolks
Bind the mixture and set during baking, giving the pudding a rich, custard-like texture.
Butter
Adds richness and a silky mouthfeel to the filling.
Loaf sugar
Sweetens the filling and, sprinkled on top, helps create a sugary finish.
Lemon juice
Adds acidity that brightens the sweetness of the apples and sugar.
Puff pastry
Forms a crisp, golden case that holds the filling while it bakes.

The step that matters

Beat the stewed apples smooth. Any lumps left in the apple purée will remain in the baked pudding. Beating while the apples are still warm and soft gives an even base that blends evenly with the sugar, butter and egg yolks.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, lemon, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, butter, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
