Ingredients

Directions

  1. If using old peas, soak them overnight; if new, use immediately.

  2. In a pot, combine peas, onions, carrots, leeks, celery, and the bone or meat.

  3. Toss in butter with parsley and small onions.

  4. Add enough good soup to wet the mixture.

  5. Drain and beat the mixture in a mortar, then pass it through a sieve with the drained juice.

  6. Transfer to a saucepan and simmer for 4 to 5 hours, stirring often to prevent sticking.

  7. Skim the surface before stirring.

  8. Serve over rice, vermicelli, or fried bread at the moment of serving.
