To Clarify Honey

Ingredients

Directions

  1. In a large pot, combine 3 quarts of water and 25 pounds of honey.

  2. Heat the mixture until the honey is melted.

What each ingredient does

Spanish whiting
Fish-based powder that binds to impurities so they can be skimmed off, clarifying the honey.
Honey
Main ingredient that forms the sweet base of the finished clarified honey.
Lemon zest
Adds bright citrus aroma to the honey.

The step that matters

Stir the whiting into the honey while it is hot and mixing. Whiting settles and sticks to the bottom of the pot if not stirred constantly with a skimmer, which can scorch the honey and leave impurities behind. Thorough stirring keeps the powder suspended so it can bind to impurities and be removed.
