Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix the pounded ingredients with boiling milk and strain through a napkin.

  2. In a stewpan, combine rice, milk, sugar, butter, and salt; boil and simmer over cinders for 1 hour.

  3. If rice is soft, mix in crushed biscuits, eggs, and yolks; blend well.

  4. Whip the egg whites and fold them into the rice mixture along with whipped cream.

  5. Prepare a dome mold by buttering it and shaping a thin paste into a cord to line the mold.

  6. Fill the lined mold with the rice mixture and bake in a 400°F (200°C) oven for 1.5 hours.

  7. Serve immediately.
