Chocolate Cream

Ingredients

Directions

  1. Shave the required quantity of chocolate.

  2. Boil chocolate gently in milk and sugar with a little lemon peel.

  3. Remove the lemon peel when mixed.

  4. When nearly cold, add 4 or 5 egg yolks.

  5. Set the mixture on the fire, stirring constantly to prevent curdling without boiling.

  6. Once uniform, pour it onto a crust of puff pastry.
