What each ingredient does

Large shrimps
Provide the main protein, which turns opaque and firm when cooked in boiling water.
Coarse sea salt
Seasons the cooking water so the shrimp are flavoured as they cook.

The step that matters

Add the shrimps to the boiling water and cook for 4 to 5 minutes. Shrimp cook quickly, and overcooking makes the flesh tough and rubbery. Timing should start once the water is boiling again after the shrimp go in.
