To Boil Meat
Ingredients
Directions
Trim and wash the meat thoroughly.
Skewer or bind the meat into shape if necessary.
Place the meat in a pot and cover it with cold water.
Bring the water to a boil over moderate heat.
Skim off any scum that forms on the surface.
Simmer the meat gently until fully cooked.
For pickled or salted meat, boil longer than for fresh meat.
For smoked and dried meat, heat slowly and change the water if it becomes too salty.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
