  1. Mix the curry powder, flour, and salt into a smooth batter with the cream.

  2. Add the batter to the boiling gravy.

  3. Simmer for 15 to 20 minutes until ready to use.

What each ingredient does

Onions
Soften and sweeten as they simmer, becoming the body of the gravy.
Butter
Carries the frying and adds richness to the finished gravy.
Curry powder
Provides the spiced, aromatic flavour that defines the dish.
Flour
Thickens the cream and gravy so the sauce holds its body.
Cream
Adds richness and a smoother, rounder texture to the sauce.
Grated coconut
Adds body and a mellow sweetness to the simmered sauce.

The step that matters

Adding the flour and cream batter to the boiling gravy. Flour thickens only when heated in liquid, but if the batter is lumpy or added unevenly it will clump. Mixing it smooth first and stirring it into gently boiling gravy keeps the sauce silky.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (onion, garlic, butter, coconut, flour, cream, vinegar):

  1. Turmericfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Clovethe original
