Lemon Sandwiches

Oven, in the book's wordsA fierce oven

Ingredients

Directions

The book says “a fierce oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out fine puff paste very thin and square.

  2. Place it on a baking sheet and cover with peach or apricot jam, leaving an inch from the edge.

  3. Roll out a second piece of paste to the same size and lay it over the jam.

  4. Moisten the edges with beaten egg or water and press them together securely.

  5. Brush the top with water and sprinkle sugar thickly on it.

  6. Mark the paste into divisions with the back of a knife.

  7. Bake in a preheated oven at 400°F (200°C) for 20 minutes or until golden.

  8. Cut while still hot along the marked lines.
