What each ingredient does

Isinglass
Gelling agent that sets the liquid into a firm jelly as it cools.
China orange juice
Main liquid base that gives the jelly its orange flavour and body.
Sugar
Adds sweetness and balances the sharpness of the citrus juice.
Lemon juice
Adds acidity that brightens the flavour and sharpens the orange taste.
Orange rind
Releases fragrant citrus oils that add aroma to the jelly.

The step that matters

Skim without boiling. Isinglass is a protein-based gelling agent, and boiling after skimming can cloud the jelly and weaken its set. Keeping the mixture below a boil keeps it clear and firm.
