Ingredients

Directions

Make the cream base

  1. Mix the heavy cream with the strawberry or raspberry jelly until well combined.

  2. Add a few drops of prepared cochineal for color if desired.

  3. Crush fresh strawberries and sprinkle with sugar to extract juice.

  4. Add the extracted juice to the cream mixture.

Add the fruit and finish

  1. For other fruits, simmer them in a little syrup.

  2. Drain and mix the fruit with the cold cream.

  3. Add lemon juice to enhance flavor.

  4. Whisk the mixture lightly until frothy.

  5. Strain through a fine sieve.

  6. Serve immediately in glasses.

  7. Alternatively, let drain in a muslin-lined mold for Italian creams.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides the rich fat base that gives the creams their body and smooth mouthfeel.
Strawberry or raspberry jelly
Adds sweetness and fruit flavor while helping the cream hold its character.
Fresh fruit
Contributes fruit flavor, aroma and juice that lightly tint and flavor the cream.
Sugar
Draws juice out of crushed strawberries and adds sweetness.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness of the cream.

The step that matters

Whisk the mixture lightly until frothy. Cream whips quickly once it begins to aerate, so overbeating turns it grainy or buttery. Stop as soon as it is frothy and holds its shape loosely.
