Good Common Blamange, or Blanc Manger

Ingredients

Directions

Make the milk base

  1. Infuse the lemon rind and bitter almonds in the milk for 1 hour.

  2. Add the sugar and isinglass, then boil gently while stirring until the isinglass dissolves.

  3. Remove any scum and stir in the rich cream.

Set and finish

  1. Strain the mixture into a bowl and gently stir until nearly cold to prevent the cream from settling.

  2. Gradually mix in the brandy before molding.

What each ingredient does

Isinglass
Sets the milk and cream into a firm, wobbly gel as it cools.
Rich cream
Adds richness and a smooth, creamy mouthfeel to the set dessert.
Sugar
Sweetens the dessert and balances the flavour of the almonds and lemon.
Bitter almonds
Contribute a characteristic almond aroma to the milk as it infuses.
Brandy
Adds alcoholic aroma and flavour to the finished dessert.

The step that matters

Stirring while the mixture cools. Stirring gently until nearly cold keeps the cream evenly dispersed, so it does not separate and rise to the surface before the isinglass sets the dessert.
