What each ingredient does

Beetroot (in the method)
Forms the main body of the dish and gives its colour and earthy sweetness.
Vinegar
Provides the acidity that preserves the beetroot and gives it its sharp tang.
Coarse sea salt
Seasons the pickle and helps draw out flavour from the beetroot.

The step that matters

Let the vinegar cool before pouring it over the beetroot. Hot vinegar softens the slices too much and can cook them further, leaving a mushy texture. Letting the vinegar cool keeps the beetroot firm and crisp while it pickles.
