Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that becomes the soft, fluffy body of the mash.
Butter
Adds fat for richness and a smooth, silky mouthfeel.
Milk
Adds moisture so the mash becomes smooth and spreadable.
Egg yolk
Proteins and fats help the surface brown when brushed on top.

The step that matters

Do not make the mixture too wet. Too much liquid thins the starch-rich potato mash, making it loose and runny instead of thick and scoopable, and it can also make browning harder.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, pepper, egg):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against butter, milk, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
