Whipped Syllabub

Ingredients

Directions

Make the cream base

  1. Warm the cream (or cream and milk mixture) with mace and lemon peel for 2 hours.

  2. Remove the mace and lemon peel.

  3. Beat the egg whites with the sugar and sherry wine until well combined.

  4. Mix the egg mixture with the cream and mill it well using a chocolate mill.

Froth and serve

  1. As froth rises, transfer it onto a sieve until you have enough froth.

  2. Prepare glasses with 2 teaspoons of wine and 2 teaspoons of sugar in each.

  3. Fill the glasses three-quarters full with the remaining mixture and top with froth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides the rich fat that gives the syllabub its body and smooth mouthfeel.
Egg whites
Trap air when beaten, creating the light froth that tops the dessert.
Sherry wine
Adds acidity and flavour that balances the sweetness and richness of the cream.
Sugar
Sweetens the dish and helps stabilise the beaten egg white froth.

The step that matters

Milling the egg and cream mixture. Milling the mixture well blends the egg and cream into a smooth, evenly combined base. Under-mixing can leave the texture uneven and the liquid separating from the froth.

Swap the mace

How well each one fits the dish's main ingredients (cream, lemon, egg, sugar, sherry, wine):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against cream, lemon, egg, sugar, sherry, wine. Candidates are from the same food group and used in at least 100 recipes.
