Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 400°F (200°C).

Mix the paste

  1. In a large bowl, combine the flour, treacle, ground ginger, caraway seeds, allspice, pearlash, and alum.

  2. Melt the alum in the milk and add it to the mixture.

  3. Mix everything together until it forms a paste.

Bake

  1. Spread the paste into a baking pan and bake in the preheated oven until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure that holds the paste together as it bakes.
Treacle
Adds sweetness, dark colour and moisture, and keeps the gingerbread soft.
Ground ginger
Supplies the warm, spicy aroma that defines the gingerbread.
Pearlash
Acts as a leavening agent that lifts the mixture and helps it darken as it bakes.
Milk
Adds moisture and helps dissolve the alum so it mixes evenly into the paste.

The step that matters

Dissolve the alum fully in the milk. Alum must be completely melted before it goes into the mixture. Undissolved pieces stay in lumps, so the leavening and tightening effects are uneven and the texture turns out patchy.

Swap the caraway

The recipe marks caraway as optional. How well each one fits the dish's main ingredients (flour, ginger, allspice, milk):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Clovefits better
  4. Carawaythe original

Fit is the average pairing score against flour, ginger, allspice, milk. Candidates are from the same food group and used in at least 100 recipes.
