Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Adds richness and helps emulsify the custard base for a smooth texture.
Cream
Supplies fat, which gives the ice cream a rich, smooth mouthfeel.
Milk
Adds water and milk solids that bring body and creaminess to the base.
Lyle's golden syrup
Adds sweetness and softens the freezing texture by limiting large ice crystals.

The step that matters

Heat the mixture in a double boiler, stirring constantly until hot. The egg yolk can scramble if overheated. Gentle, constant stirring over indirect heat thickens the base smoothly and keeps it from curdling.
